CRUNCHY NOODLE SLAW + HONEY VINAIGRETTE

I really hate mayo. Like, I just hate it so much. Actually, most squidgy, gelatinous, off-white substances freak me out. If I had a nickel for every time I heard "that's what she said" after a statement like this, I wouldn't be rich because inflation is REAL, but I would have a pretty hefty chunk of change.

What would I do with said hefty chunk of change? I'm not sure, but I can tell you what I wouldn't do: BUY MAYO.

I just don't get it. Why ruin a perfectly delicious sandwich with a slathering of this sad, strange substance? My freshman year of college some friends and I did a late-night Jimmy John's delivery when we were all totally sober and my veggie delight sandwich had been smeared with mayo by mistake. Veggie delight my ass. I gave it to a friend who ate it gleefully, while I slumped on the couch and rued the day mayo was ever created.

KHAO NOM KOK (LAO COCONUT CAKES)

This recipe is whole-heartedly dedicated to my favorite dairy free/gluten free lady, my cousin, Miki. She spent 17 days of her 3 month adventure in South East Asia with me exploring northern Vietnam, Laos and Chiang Mai, Thailand. Easily, one of my favorite parts of the world, I was doubly as excited about Southeast Asia because Miki could eat practically everything there. Rice noodles, coconut milk - these dairy and gluten alternatives were perfect! We ate so many bowls of pho I lost count, and guzzled what can only be considered the world's best smoothies, but the treat that really took the cake (coconut cake, that is) was the Khao Nom Kok.

VEGAN RAINBOW COBB SALAD

I don't like bacon. There, I said it. I'm often approached by outraged and baffled friends and strangers who can't believe I don't like bacon. Usually, this is followed by the accusation that I'm a religious Jew, as if that somehow explains it. 

The truth is, I simply don't like the taste. It's no secret that I'm the meat-eater of this blog duo, but when it comes to smoky meat, specifically pork, I didn't grow up eating it and therefore don't like the way it tastes. Sorry, folks. 

This faux bacon, though, is on another level.

ANYTIME BREAKFAST POTATOES

When Rina and I first started this blog, one of our early debates was regarding the most superior potato style. I mean, what an an impossible question, right? Think of the wonderful forms potatoes take - crispy french fries, greasy hash browns, sweet potato casserole topped with marshmallows, salty chips.

While I have yet to meet a potato I don't like, I find that versatility is key and lot of these potato styles (i.e. sweet potato casserole) don't really go with everything. Enter this recipe. I was playing around in the kitchen after getting a ginormous bag of potatoes in my weekly CSA (if you're not already a part of one and are looking for fresh, local produce, I highly recommend you look into a CSA. More info here). I needed a potato style that could last me many meals over multiple days. I also had some dried sage from a past CSA, so I quickly doctored up a new kind of roasted potato - a cross between home fries, roasted potato wedges and parmesan truffle fries (ish).

KALE + WHITE BEAN SALAD

Remember when kale was seen as nothing but a mere garnish to place various mayonnaise-based salads upon? Seems like ancient history, right? Now that kale is in everything from smoothies to pasta, it's hard to recall a time when people weren't obsessed with what carnivores could rightfully call "rabbit food."

SHREDDED BRUSSELS SPROUTS SALAD WITH GRAPEFRUIT AND AVOCADO

When I was younger, my family went on a few cruises with my mom's side. I don't remember that much about them, but the majority of what I do remember is food-related (duh). Eating room service fries with my sisters and cousin, the insane art carved into watermelons and cantaloupes and, most notably, the nightly dinners in the dining room. These cruises were like, v. fancy, and so we would dress up in our finest Jessica McClintock (RIP) dresses and be served by very nice, very snazzy waiters. While breakfast and lunch were free-for-alls with buffets that could easily feed five times the amount of passengers aboard, dinner was a set menu with classy dishes.

One dish I remember was an appetizer of grapefruit and avocado salad. I had never had this combination before, and to be honest the idea kind of freaked me out. This was also way before the avocado craze, the millenial pink craze, and the pink and green color scheme craze existed.

My parents were really good about encouraging us to try new foods while respecting our likes and dislikes. When the avocado and grapefruit salad appeared on the dinner menu one night, my dad suggested I order it - I could always get something else if I hated it, since cruises are filled with literal tons of food. Well, thank you dad, because that salad was fantastic and now avocado and grapefruit are two of my favorite foods.

ORANGE CAULIFLOWER

When I was growing up, my family kept pretty strict kosher. This meant separate dishes for milk and meat, bringing PB&J sandwiches to birthday parties where non-kosher pizza was served, and eating in exclusively kosher restaurants. The first time I ate at a non-kosher place was when I was sixteen-years-old. It was Panera. I got a bagel. It was very exciting.

Why am I telling you this? Well, besides the fact that it completely shaped how I eat, and is largely the reason why I became a vegetarian, it means that I have no idea what the majority of chain restaurants are. Like, what is PF Changs? Why are people so obsessed with Taco Bell? What the hell is a Whopper? I seriously have no idea.

SPICY CHERRY SALSA

There is a magical place in Michigan called Traverse City, and it's kind of like the Emerald City of Oz, only instead of everything being green, everything is cherry. There's a huge cherry festival during the summer, when the trees are blooming and the weather isn't truly heinous. Cherries are in everything, and that isn't an exaggeration. With the cherry boom, cherries work their way into anything remotely edible. This is proof that God/Gods/higher powers/divine felines exist, and that they are good.

PORTABELLA-VEGGIE FAJITA BOWLS

I can’t tell you how much I love Mexican food.

It combines all of my favorite things – cheese, spice, corn and avocados and can be eaten with your hands. It's my go-to drunk/pre-drunk/drinking/non-drinking-but-just-hangry food (just ask any of my kickball teammates). If I could eat bottomless nachos and never feel sick, I would sign my soul away to the cheese-covered devil.

VEGAN CORN CHOWDER

The post-college, pre-kids stage is a time when friendships feel crucial. Especially since I'm living in a separate state from my family, I rely on my friends (and boyfriend, but that's for another time) for the day-to-day social interactions and trouble-shooting. Over my time in New York, my friends have accompanied me to various doctor's appointments that have felt scary, and I have done the same for them.  Yes, we are adult women who are perfectly capable of going to the doctor's on our own.  That isn't the point; the point is that we are there to support each other through the parts of life that are happy and exciting of course, but also scary and upsetting.
